Traditional Emirati food (Luqaimat)

Luqaimat is a well known dessert in the Middle East. The way is completely different between them, but they all look the same. In UAE Luqaimat, is usually made in the month of Ramdan and enjoined after Iftar. Also, it is served at special occasions. They are crunchy on the outside and soft on inside. They are so easy o make, but you should to know how to fry them the right way in deep oil. To make Luqaimat we will need the following ingredients:
-2 cups all purpose flour
-1 teaspoon dry yeast
-1 1/2 teaspoon sugar
-Pinch of salt
-1/2 teaspoon cardamom powder
-1/2 teaspoon saffron
-1 1/4 cup warm water
-Oil for deep frying
Add saffron and cardamom to 1/4 cup warm water. Keep aside.
Add flour with salt and keep aside.
In 3/4 cup warm water, add sugar and yeast. Keep aside for 5 minutes.
Leave the batter to double in size. It may take 30 to 40 minutes. The batter now should have bubbles. Heat oil,take spoon from the batter and carefully drop it in the oil. When the Luqaimat is light brown, remove it from the oil. Pour your favorite syrup on top. Some people like dates syrup and others like honey or normal syrup. You should serve these Luqaimat the same day you make them.

  1. Thank you for this recipe. I used to always mess my luqaimats and they used to end up being disintegrated and lumpy. Reading this I realised that I was missing the salt and not letting the batter get bubbly. This really helped me. :)
